Oyabun Honesuki-maru

The Honesuki-maru is designed specifially as a boning knife, but this style of blade will lend itself to a multitude of food prep tasks. The 80Cr V2, core holds a very fine cutting edge and combined with the Shiro 2 and stainless steel cheeks which adds another dimension aesthetically to the overall look of the blade. The blade length is 160mm, with a thickness on the spine of around 3mm. The tip of the knife is fine and lends itself to intricate cutting tasks easily, the overall length of the knife is around 276mm. The stabilised walnut burr handle scales are combined with red liners and everything is held in place with two stainless steel Corby bolts. The handle ergonomics have been designed to give the user maximum grip control and comfort while using this knife and the stabilised wood will resist moisture ingress prolonging the life of your beautiful handle.
